3 Easy Healthy Ethnic Dishes

I, the infamous Green Queen, am a bit of a foodie.  I love to chow down on healthy cuisine from the farthest corners of the Earth.  I love Chinese, Indian, French, Italian, Vietnamese, and I also love American… But, this post is going to be about some easy dishes from foreign countries that you can cook before the rice is even done.  Quick, painless, and most importantly healthy!

Low-fat Indian Chicken Curry

1 lb of cubed chicken breast, no-skin, boneless
1 cup chopped onions
2 tbsps oil
1 tbs approx of curry powder
1 tbs of low-fat sour cream
salt and pepper to taste
cilantro

Directions:

First, turn stove on to medium-high heat with oil.  When hot, add slices of onion.  Sautee

While this is cooking, marinate the chicken with half of the curry powder and add salt and pepper to taste (not too much salt because of the sodium).

Move onions to bowl, and cook chicken until thoroughly cooked – no pink.

Add sour cream and rest of curry powder.  Put the onions back in the mix.

Heat, and serve hot on a bed of white or brown rice (brown is healthier) with cilantro for garnish.

ENJOY!

Spicy Szechuan Tofu

24 oz. firm tofu
2 tbsps oil
1 cup chopped scallions
1 tbsp Szechuan hot bean paste
½ tbsp cornstarch dissolved in 2 tbsps water
1 tsp sesame oil
2 tsp water or chicken stock
1 tsp minced fresh ginger
1 minced garlic clove

Direction:

Wash and rinse tofu, and cut into 1-inch cubes.

Over medium-high heat, sauté garlic, ginger, and tofu with water.

Add hot bean paste and sesame oil.

Add cornstarch dissolved in water.  Bring to a boil to activate and reduce heat.

Add scallions, and mix.

Serve hot over a bed of white or brown rice.  Delicious.

If you don’t like tofu, you can substitute for broccoli, but I recommend the tofu.  MmmMMmmMMm!

Greek Tuna, Cucumber & Tomato Salad

1 can tuna
1 cucumber
1 tomato
1 tsp. extra virgin olive oil
1 tsp salt
season to taste

Directions:

This is the easiest recipe you can possibly imagine, and it’s under 200 calories

Drain tuna, chop cucumber, and dice tomato.  Mix in Tupperware.

Drizzle with olive oil, salt, and seasoning (oregano, thyme, dried mint, garlic powder, basil, marjoram, and onion powder)

Seal the container, and shake.

That’s it.  Enjoy!  It’s a delicious and healthy alternative to that tempting grease ball of a burger you’ve been eyeing for the past week.
