Friday Fun Day: Say Cheese Please!

It’s our favorite time of week…Friday Fun Day! For those of you who don’t know, Friday Fun Day is a way for the Maxim Hygiene team to come together at the end of a busy week and have a little fun. Each week, a different member of our team will be in charge of creating a fun way to start our Friday. This week, Maxim Hygiene’s CEO, Kenneth was in charge. Here’s what Kenneth has to say:

For my Friday Fun Day, I taught the Maxim Hygiene team how to make their own cheese. Follow these next steps to learn how you can make delicious homemade cheese:

(Step-01)  Choose a Stainless Steel Strainer Spoon, the right size Pot and one Gallon of milk of your choice (Whole, 1% or 2%).  Pour the milk into the pot and start to boil it on the oven.

(Step-02)   Prepare one cup of white vinegar.

(Step-03)   Boil the milk for 10 to 15 minutes.  Use strainer spoon to stir the milk. This action prolongs the boiling process and stops the milk from hardening. This also helps to make homogenized cheese at the end.  Use your heart and imagination during this part.

(Step-04)  Once the milk has boiled, pour the vinegar all around the top of the milk inside the pot.  This will cool down the boiling milk and suddenly the milk become soft solid in small pieces. At this point let the solid milk or the cheese boil for few seconds more and then turn off the oven.

(Step-05)  Take the whole pot off the oven and move it to cooler place and leave it there for few hours (minimum of 2 hours) till it cools down.  The longer you leave it, the better.

(Step-06)   We need a strainer and a cotton cloth bag to drain all the juice out of our Cheese.  Lay down the cotton bag all around the strainer.

((Step-07)   It depends how you want your cheese to taste either pure natural cheese or have some kind of flavor.  You can mix different herbs and seasonings into your final cheese product.  I like black sesame seed and Zahatar seasoning.

(Step-08)  Step by step use your strainer spoon and empty the solid cheese from the pot into the cotton cloth drainer.  Pour the seeds and the herbs on as you layer the mixture.

(Step-09)  Set aside a container and salt.  Empty some of the liquid from the pot into the container (not more than a quarter of the container).  The liquid will help preserve the cheese for longer.  Add whatever amount of salt that you like (depending on how salty you like your cheese to be) inside the container. Mix the salt and the liquid inside the container.  Leave the container on the side for later.  Then place a heavy weight (I use the milk jug filled with water) on top of the cloth bag to drain the rest of juice from the cheese.

(Step-10)   Tie and press the cotton cloth bag and press it with your hand to get the excess liquid out of it.  Then put the milk container which is full of water on top of the cheese cloth bag.  Keep it in room temperature (cooler better) for a few hours.

(Step-11)   Open the cheese cloth bag to reveal good solid delicious cheese.  Cut it into smaller pieces and put these pieces inside the container with the salted liquid. Close the container and leave it inside the refrigerator over night.  The next day your cheese will be ready for you to enjoy.

My advice to you is to use your heart and soul to make this cheese.  I guarantee it will be the most delicious cheese you have ever had.
